The Egg Guy’s Microwave Scrambled Eggs

The Egg Guy says you can’t beat an egg for breakfast. Well, in this recipe he beats a couple of them into the yummiest scrambled eggs – so Mr Egg Guy, you can beat an egg after all!
Cooking Time:
2 - 3 minutes
Serves: 1
  • 2 Eggs
  • 2 Tablespoons of trim milk
  • Pinch salt
  • Pinch freshly ground black pepper
A quick and easy way to cook scrambled eggs and you don’t even need a stove.

  1. Grab a microwave safe bowl. 
  2. Break two eggs into the bowl, add the pinch of salt and ground black pepper. 
  3. Beat the eggs with 2 tablespoons trim milk using an egg beater. 
  4. Beat well so the yolks and white are well mixed. 
  5. Cover the bowl with plastic wrap. (Be sure to leave a small gap as a steam vent, so the egg doesn’t go everywhere when you microwave it.) 
  6. Microwave on MEDIUM-HIGH for 45 seconds, take the wrap off, stir. 
  7. Then put the wrap back on and cook for another 45 – 75 seconds. 
  8. Do this a couple more times, until the eggs are still moist but starting to get firm. (Note: Cooking time will vary dependent on how powerful your microwave is). 
  9. Cover and let stand for 30 seconds to 1 minute before serving.
The eggs will look slightly moist, but will keep on cooking while they are standing. While eggs are cooking, toast your toast. Butter if you want to. Then pour the scrambled eggs over the toast.
