The Egg Guy's Eggy Bread

Eggy bread! Sounds like eggy head! Well, you don’t have to be an egg head to cook this brill breakfast. You can cook it and make it sweet, or make it savoury – or make it both.


Cooking Time:
10-15 minutes
Serves: 4

4 Eggs

1-2 tablespoons margarine

4 tablespoons milk

6 - 8 slices of toast bread

Pinch of cinnamon

 

If you like you can add some fresh fruit e.g. sliced banana and yoghourt at the end.

 

You will need a large non stick frying pan. And a large plate.

1. Mix the eggs and milk in a mixing bowl. Toss in the pinch of cinnamon.

2. Heat the frying pan, with the margarine. Don’t turn up too high.

3. Cut your slices of toast bread into halves or triangles. You choose. Then dip these one piece at a time into the egg and milk mixture, coating each side well. Put aside on a plate as you go.

4. Now put the coated bread into the frying pan and cook for 2 to 3 minutes on each side – or until golden. You should be able to cook 2 – 4 slices of the bread at one time, so two batches should do it. Put some more margarine in the pan between batches.

When all the bread is cooked, put onto the plates and serve. Spoon on the fruit and yoghurt. (Or how about some honey. Or even more of a treat, with nice hot bacon.
