The Egg Guy's Easy Carbonara

I’ve got to hand it to the Egg Guy. He takes a classic dish and makes it so easy to cook. This one is so simple, I think my farm dog could cook it. I know if I left any on my plate he’d eat it.


Cooking Time:
10-15 minutes
Serves: 2-4

Spaghetti (or another pasta, like macaroni)

3 eggs

2 egg yolks (in addition to the three eggs)

½ cup freshly grated parmesan cheese

½ teaspoon of salt

3 - 4 rashers of rindless bacon

Freshly ground black pepper


Measure out enough pasta to feed the number of people who are going to be eating. Put it into lots of hot salted water in a big pot. Look on the packet to see how long the pasta should cook for.

 

While the pasta is cooking fry the bacon in a deep pan, and in another bowl combine the whole eggs and the egg yolks.

 

When the pasta is cooked drain the water (pouring it through a sieve is a good idea). Be real careful doing this. Then put the pasta into the pan with the cooked bacon in it. Take the pan off the cooktop.

 

Next pour the egg mixture over the pasta, and stir gently, to combine the egg and bacon and pasta. Also stir through a good grind of black pepper.

 

Now leave everything to stand for a minute. This lets the egg cook properly. You can put some grated parmesan on top, and sprinkle some parsley on top to make it look flash.

 

PS: You can add other things too if you want – like peas or onion or green pepper. It’s up to you.
