Open Asparagus Sandwich

- 1 Farmer Brown Poachers egg
- 1 slice wholegrain bread - toasted
- 4 fresh asparagus spears (preferably thin) - blanched
- Chopped chives
- Salt & Pepper
- Boil a large pot of water. Place your asparagus into the boiling water. Cook until the asparagus turns a bright green colour. The time this will take will depend on how thick your asparagus stalks are. Count on between 2-5 minutes or so.
- Remove asparagus from the pot with a slotted spoon or tongs and placed in cold water to stop the cooking process. This will tenderise the stalks a bit more, but they’ll remain deliciously crunchy. Drain.
- Toast wholegrain bread until golden. Butter, if desired.
- Cook Farmer Brown Poachers egg by following my good recipe
- Place asparagus spears on top of bread.
- Place Farmer Brown Poachers egg on top of asparagus. Season.
- Sprinkle with chopped chives.
