Open Asparagus Sandwich

Open Asparagus Sandwich

Serves: 1

  1. Boil a large pot of water. Place your asparagus into the boiling water. Cook until the asparagus turns a bright green colour. The time this will take will depend on how thick your asparagus stalks are. Count on between 2-5 minutes or so.
  2. Remove asparagus from the pot with a slotted spoon or tongs and placed in cold water to stop the cooking process. This will tenderise the stalks a bit more, but they’ll remain deliciously crunchy. Drain.
  3. Toast wholegrain bread until golden. Butter, if desired.
  4. Cook Farmer Brown Poachers egg by following my good recipe
  5. Place asparagus spears on top of bread.
  6. Place Farmer Brown Poachers egg on top of asparagus. Season.
  7. Sprinkle with chopped chives.
