- 1 Farmer Brown Poachers egg
- 1 slice wholegrain bread
- 2 tbspn tinned corn kernels - drained
- 1 tbspn chopped red pepper
- 2 tspn red wine vinegar
- 1 ½ tbspn extra virgin olive oil
- Italian Parsley
- Salt & Pepper
- Mix together drained corn kernels and chopped red pepper in a bowl.
- Whisk together red wine vinegar and extra virgin olive oil until combined. Season with salt & pepper to taste. Spoon through corn and red pepper medley.
- Cook Farmer Brown Poachers egg by following my good recipe.
- Place corn and red pepper medley onto wholegrain bread.
- Place Farmer Brown Poachers egg on top.
- Garnish with parsley sprig.
- Season with salt and pepper.
