  1. Mix together drained corn kernels and chopped red pepper in a bowl.
  2. Whisk together red wine vinegar and extra virgin olive oil until combined. Season with salt & pepper to taste. Spoon through corn and red pepper medley.
  3. Cook Farmer Brown Poachers egg by following my good recipe.
  4. Place corn and red pepper medley onto wholegrain bread.
  5. Place Farmer Brown Poachers egg on top.
  6. Garnish with parsley sprig.
  7. Season with salt and pepper.
