Brownie's Favourite Spicy Frittata

Frittata is a flash word for savoury pancake or in my world bubble ‘n’ squeak made with eggs and vegetables. Chunky and filling, it’s easy, quick to prepare and a great way of using up your leftovers!

  1. Boil potatoes in salted water until just cooked. Drain and return to element for a few seconds to dry out. Heat half the oil in a non-stick frying pan and fry the potato cubes, onions and sausage for 2 – 3 minutes, stirring frequently.
  2. Whisk together eggs, chilli flakes, salt, pepper and parsley. Add remaining oil to the pan and pour in egg mixture.
  3. Reduce heat and cook gently for 5 - 10 minutes.
  4. Heat a grill.
  5. When frittata is well set around the edges, carefully place under the grill to finish cooking. It should be completely set and light golden in colour.
  6. Serve warm with salad or cold in lunch boxes.
